This beautiful moist flourless almond and orange cake makes a healthy protein-rich afternoon treat with a cup of tea. Almonds have a low glycaemic index due to being rich in fibre and healthy fats. Consuming almonds will help promote a feeling of satiety, along with stabilising blood sugar levels and helping curb sugar cravings.
Ingredients
- 1 large organic orange
- 1/3 cup raw honey or pure maple
- 240g almond meal
- 2 tsp baking powder
- 1 tsp vanilla bean extract or paste
- 3 large organic eggs
- 1/3 cup orange juice
- ¼ cup raw honey or pure maple
Method:
Preheat oven to 160*C fan-force. Grease and line a medium round cake tin with
baking paper.
Boil the orange for 60 minutes in a medium saucepan filled with water, until it’s soft.
Cool and then roughly chop it and remove any seeds.
In your food processor blend cooled orange, honey, vanilla and eggs, until you have
a smooth consistency.
Place almond meal and baking powder in a large bowl and combine well.
Pour the orange mixture into the almond meal and gently combine.
Pour your batter into the prepared cake tin and bake for 50 minutes, or until a skewer
comes out cleanly from the centre.
To make the orange syrup place the orange juice and honey in a small saucepan
and bring to a boil for 2 minutes, then set aside.
This orange cake is delicious served with a spoonful of yoghurt and drizzled in
orange syrup.
