Quinoa is an excellent source of protein, fibre and energy giving complex carbohydrates. Carrots are packed with beta-carotene goodness for healthy eyesight and a strong functioning immune system.
20 g quinoa grain
1 small carrot
1-2 basil leaves
Peel, wash and dice vegetables.
Rinse quinoa and cook in boiling water for 10 minutes.
Steam carrot, zucchini and basil for 10 minutes until soft.
Mash quinoa and vegetables together or blend with hand mixer.
Allow to cool and then serve.
