Packed with protein and omega-3 goodness these salmon patties make the perfect snack, nutritious meal served with salad or vegetables, or healthy burger on a wholemeal roll.
500g kumera (orange sweet potato)
415g can salmon, drained
1/2 red onion, finely chopped
1/4 cup chopped fresh basil
¾ cup corn kernels
1 small crushed garlic clove
Cut kumera into pieces and steam for around 10 minutes until cooked through.
Then mash kumera in a bowl, add salmon, onion, basil, pinch salt and pepper, corn kernels, and garlic clove.
Gently combine ingredients then divide up into small patties (makes around 12).
Cook patties in a frying pan with a little olive oil, or cook in the oven on 190*C for around 20 minutes.
Serve with a handful of baby spinach, slices of avocado, and a spoonful of tatziki or mango or tomato chutney.
