Lentils are a major source of dietary fibre and protein. This mash contains importantvitamins and minerals, namely beta-carotene, iron and B vitamins. Leeks areclassified a mild onion and supplies a good amount of minerals such as potassium,calcium, silicon and phosphorus and B vitamins.
50g butternut pumpkin
25g dried red lentils
1 Tbsp grated cheddar cheese
Peel and dice pumpkin.
Rinse lentils well.
Cook lentils in boiling water for 15minutes, until tender.
Steam pumpkin and leek for 10 minutes,until soft.
Puree lentils together with pumpkin, leekand cheese.
Add a little milk for a thinner consistency.
Allow to cool then serve.
