Protein-packed frittata fingers make a perfect snack for toddlers.
1 small potato or sweet potato
2 Tbsp grated cheese
1 Tbsp peas
1 Tbsp corn kernels
1 Tbsp red capsicum
Cook vegetables in a frying pan with a little olive oil.
Beat eats with cheese and pour into pan over vegetables.
Place pan under griller and cook until top is golden brown and egg cooked right through. Cut frittata into strips and serve oncecooled.
